I noticed the default Superhornet has a custom control binding section.
Where in the documentation would I find an explanation on how to set one up for my own aircraft?

Aircraft specific input profile cannot yet be edited in the current SU5 Beta 1.7.6.0 but this will come with the next Flighting update.
For now you can only edit Transversal and Aircraft generic profiles.
In the meantime, you can familiarize with part of the process by reading this:
Input Profiles
With the next update, the “Input” tab of the SimObjectEditor will now list all actions available in the currently selected attachment and will let you create the mappings with the Input Editor.
